We all keep hearing the phrase "find what sparks your joy." For me that is putting smiles on people's faces and filling thier stomachs. Once I started baking and cookiing, I was amazed at how it was a process many didn't enjoy or they were intimidated by cooking. Cooking is an amazing creative outlet. My hope is that I can help at least one person find a new spark in thier kitchen.

Y’all you have NO idea how this blows my mind.

This is a
sweet potato snickerdoodle.

Growing up I was pretty sure the only thing you could do with a sweet potato was cover 

it in King's syrup and brown sugar. I made these and even my youngest, Brian, was all 

over them!  

Now here’s something you may not know about me.

I cannot bake cookies. Seriously. I will tackle a cake, soufflé, quiche, even creme brûlée.

But a cookie. I fail every time. Ask my oldest. I once baked those break apart cookies

and they stayed square. Like never poofed, spread, nothing. Jokes on you Nestle. We still

ate them. 

So tonight when I had left over sweet potato that was steamed, I thought hmmmm

I saw a lady made pumpkin snickerdoodles so why not sweet potato? But I did change the recipe a tad.

Heat that oven to 325
Have 6 TBS unsalted butter soft in a bowl. Add 1/3 cup sweet potato that you steamed or baked till soft. Just mush it in a cup. Don’t add anything to the sweet potato.

Stir.

Then add 1/2 cup brown sugar and 1/2 cup white sugar.

Cream it all together.

Add two eggs and mix.

Now in a separate bowl whisk 3 1/4 cup flour, 2 tsp cream of tartar, 1/2 TBS cinnamon, 1 tsp baking soda and a pinch of salt.

Add it to the sugar goodness and mix it all up.

Take the dough and roll into balls. I did about 2 TBS balls.

In another bowl have 1/4 cup sugar, 1/2 TBS cinnamon, and tsp nutmeg all mixed up.

Roll those dough balls in the sugar bowl and place on a silpat on a cookie sheet. Bake 12-13 minutes.
